I will probably replacing my KO2s with a set of Pirelli Scorpion All Terrain Plus. The tread looks similar to the grapplers. I had the scorpion on my F150 and love the road ride and would handle every trail I went on. (Never anything super challenging). One of the reasons I purchased them is they have one of the highest wet pavement rating for an All Terrian tire.
 
I went with 285/65/18's on stock wheels. Same height as the 255/70's but a little wider. I had the AT's not the KO2's and I went with the Nitto Recon Grappler. I like the look and it feels like the ride is better since there's more tread on the ground.
285/65/18 should be about 0.5 inches taller than 255/70/18. So that should translate to a 0.25 inch ride height increase. I just happen to know because I am also considering 285/65/18.
 
Here are some photos of the +40 offset with 285/70/17's. Handling is much better.
This looks too good, I am torn between this wheel/tire combo or 285/65/18 on stock wheels. Any chance you could show more pics of the tire poke on both the front and rear? How much does the tire poke out from the fender flare?
