Got my vehicle early this month and took it off roading in Central FL. Although I had a ton fun I did end up getting stuck on a mud bog.

I learned my lesson but luckily someone pulled us out about an hour after being stuck. No water got in the car. But anything I should consider? I did get nervous my engine was going to have water damage but the car is running smoothly.

you are lucky. one or two meters (yards) more you might have drown the air inlet on the right side.
The only thing I would consider is an oil change in the front diff. I do not know how warm it was before entering the water but it had certainly enough time to cool down. I still do not know how the valves operate exactly but there might be a chance that water has been sucked in.

If you don't get stuck you are not trying hard enough.

Just give it a hose down, or find a clean puddle to drive through.

As I'm only a professional off-roading poser, what is one actually supposed to do in this situation once you're stuck? My winch is in the front, so not very helpful. Get soaked putting traction boards under the rear tires?

I'm no expert either, but what I learned many years ago is that it's always safer to go with multiple vehicles. I've been to some off-road parks that require groups of three.
