Okay so the rig is great, I have almost completely recovered from Battered Defender Syndrome. Except, my truck was delivered with exactly one key - they assured me the replacement would be there soon. It's close to a year. Anyone else had this issue? Or are keys at every other dealership, and not Mossy Ineos in Houston?

You should have 2 keys, not sure on American legal stuff but over here I would send a recorded letter giving a timescale for them to rectify the issue.

My Grenadier was delivered in Los Angeles with two (2) keys in December, 2023.

I am supposed to have 2 keys - but the porter at the dealership lost one. For whatever reason they can't seem to get a replacement, which is a bit of a joke.

They did however, replace my windshield pretty quick.

I suspect the reason they can't get a replacement is the extraordinary high cost of a replacement they will have to bear if through their negligence they have misplaced it. Probably waiting to see if it turns up somewhere to avoid the costs

Keys should absolutely be available... Like many other brands, it wouldn't surprise me if it has to be ordered by VIN and comes shipped from Belgium pre-coded to the vehicle.

This is something your dealer should have been able to rectify within the first 2 weeks, tops.

Actually I believe they come directly from Continental, as you say, already coded to the vin.

Ours came with two keys and we ordered and paid for an extra at purchase. Haven't seen hide nor hair of it. At last contact the dealer said they were two months out. It's been about six weeks I think.

First - got my key!! Second in the US it appears they have scrapped the plan of ordering them from Europe pre-coded. The blanks are sent to dealerships, where they cut and code them. YMMV by dealer, but that's what mine did. Now just waiting for my tougher covers to get here!!!
