I am planning a trip out to Chicago to pick up a trailer and an old Porsche 356 with a load of parts then driving it all back out to Colorado. The trailer is super lightweight and has some self braking mechanism and the car probably weighs under 2000 lbs so I think I am good with weight. Heading back to Colorado is a long, slow 5000 foot climb, usually with a pretty decent headwind.

Any advice for the setting up the Grenadier?

Stock setup will be fine. Make sure the trailer lights, brakes and tyres are in great working order!
And secure that 356 well! They're lovely old cars and very valuable these days.
 
Should be a pretty easy tow from the sounds of things... The slow ascent through western NE and eastern CO should be no problem at all, especially not at that light of a weight.

Do expect to bump up the tire pressure in the rear a bit... Assuming you'll be in the neighborhood of 4000lbs for trailer and car, you're adding ~400-600lbs of weight to the back of the truck. An extra 3-5psi should do you well

Check Tire Pressures, Check to see if your Grenadier falls under the Trailer Turn Signal MWO (causes the trailer turn signal to not function, simple software update if it does apply) and check all fluids.

In addition to all the above prepare to accelerate slower, cruise at a lower speed, brake earlier than you usually do.

Also i’d invest in a good trailer hitch that is height adjustable since it sounds like you are picking up the trailer too. Best to be able to have some ability to adjust the hitch height to get as close to level as possible
